论宣威火腿文化

摘要

 宣威是著名的云腿之乡，独特的水土，气候，为火腿的腌制生产提供了得天独厚的条件。凭着宣威人民执著追求不断创新的精神。其形似琵琶或柳叶，皮色腊黄，瘦肉桃红色或玫瑰红色，肥肉乳白色，肉质滋嫩，香味浓郁，咸香可口，以色、香、味、形著称的宣威火腿不仅营养丰富，且具有抗癌、健美的功能。宣威火腿历史悠久，斐声海内外，具有丰富的文化内涵，本文从其形成过程，本土人民的创造精神和待客之道及价值分析三方面对其进行探讨。

The culture of Xuanwei ham

Abstract

 Xuanwei is renowned as ham . And the natural environment and climate provide uniquely excellent conditions for ham’s pickled . The Xuanwei people headstrong ahout constantly bring forth new ideas . And the ham is famous for its colour , scent , taste and shape . The shap of the ham likes loquant or willow’s leaf ; the skin colour is wax yellow ; the lena meat is peach blossom red or rose-red and fat meat is milk white . The ham is very tender intense strong fragrance and delicious . The ham not only rich in nutrients but also has medciness and vigorous and graceful functions . Xuanwei ham has a long history , enjoy great prestige both at home and abroad , and rich in culture . This thesis discusses the form of the development process , the local people’s creativeness and the feast a guest and the value of those three fields .
