贻贝蛋白及其酶解物的抗氧化活性研究

中文摘要：本范文以贻贝为原料，采用酶解方法制备具有显著抗氧化作用的活性肽。分别构建DPPH自由基体系，Fenton体系，超氧自由基体系，金属螫合力的测定体系以及还原力的测定体系，对贻贝粗蛋白与贻贝酶解物的抗氧化活性进行比较研究，并以还原性GSH为对照，最终评价贻贝酶解的效果以及贻贝酶解物的抗氧化活性。

Study on antioxidative on mussel protein and the substratum of mussel

Abstract:This article uses mussel as materials,and uses enzymatic methods to prepare a remarkably antioxidant peptide.This article uses the assay system of DPPH,Fenton and super oxygen,Determination of ferrous ion-chelating activ ,Determination of Reducing power to study on the antioxidation activities of Mussel protein and the substratum of mussel and compare with GSH. The article appraises the antioxidation activity of mussels protein and the mussels substratum finally..
