范文编号:SW074 范文字数:10411,页数:24 摘要: 色素通常作为着色剂,可改善物质的色调和色泽,在食品添加剂中用途较广。色素按其来源,可分为天然色素和合成色素两大类。天然色素主要是从植物、动物和微生物中提取的.随着这几年人们认识到天然色素的优势,对它的需求量越来越大,传统的从动植物提取的方法已无法满足这种需求。利用微生物发酵生产可用色素逐渐被重视,并成为热点研究问题。本实验是研究一种产玫红色素的菌株,利用单因素、正交等方法测定其生物学特性,找出最适合该菌生长的培养基以及温度等培养条件。通过液态摇瓶培养可获取色素。由于大多数色素在利用时要考虑其稳定性及其功能等因素,所以在这次实验中对色素的稳定性和抗氧化性进行了一个初步的研究。测试稳定性时,利用其吸光度的变化可分析得出结论。抗氧化性实验时,主要是用DPPH自由基清除法、羟自由基Fenton反应比色法等方法测定。
