范文编号:SP124 范文字数:12474,页数:32 摘 要:西洋菜(Nasturtium officinale R.Br.)属十字花科植物,研究发现这类十字花科蔬菜富含可以预防癌症的活性成分---异硫氰酸酯(Isothiocyanate, ITC)。异硫氰酸酯具有杀菌、抑菌和消灭消化道中寄生虫的作用,并能够有效防止饮食中的多种致癌物所引起的DNA损伤和癌变。本文通过建立高效的提取方法,以新鲜西洋菜为原料,制备异硫氰酸酯提取物,并对其抗氧化活性进行了研究,主要包括:西洋菜中异硫氰酸盐提取物对超氧阴离子自由基、[DPPH•]自由基、羟基自由基的清除能力,并测定了提取物的还原力大小,以及不同处理温度和贮藏时间对提取物抗氧化活性的影响。实验过程中以一定浓度的Vc作为同步参照。实验结果表明:西洋菜异硫氰酸酯提取物具有较强的抗氧化能力,对自由基清除效果显著。但稳定性较差,容易受贮藏温度、贮藏时间等因素影响。 Abstract: Nasturtium officinale R.Br. is a kind of vegetable of Crucifer rich in isothiocyanates, ITCs which can prevent from cancer. Functions of isothiocyanate like sterilizing, bacteriostatic action and annihilating the digestive tractparasites have been reported. It also can effectively protect DNA from damage and cancer caused by kinds of carcinogen from diet. Isothiocyanate was extracted from fresh Nasturtium officinale R.Br. Then the ability of inhibiting hydroxyl radical action, and scavenging super oxide anions was studied in this article as well as the reducing capacity of isothiocyanate extracts was determined compared with the vitamin C. The effect of treatment temperature and time on antioxidation activity of ITCs extracts and vitamin C solution was also studied. The result indicated that ITCs extracts showed stronger antioxidation ability, and remarkable to the free radical elimination effect. But its stability was easily to be destroyed by the higher treatment temperature and longer storage time. Key words: Nasturtium officinale R.Br; Isothiocyanate(ITC) ;antioxidation activity
