范文编号:SP089 范文字数:9466,页数:18 摘 要:本实验采用包结络合物法对WPC80粉水解液进行包埋,对影响WPC80粉水解液包埋的多种因素如壁材选用、复合壁材配比、心材与壁材比例、总固形物浓度、均质时间等进行了系统研究,对包埋产品的配方、工艺参数进行了优化。实验结果表明,在WPC80粉水解液进行包埋的过程中,选择大豆卵磷脂、β-环糊精作为壁材比采用β-环糊精、单甘酯等其他材料作壁材有更好的效果;壁材配比(β-环糊精/大豆卵磷脂)对产品的包埋率影响显著。在适当的微胶囊乳化液粘度范围内,提高β-环糊精的比例,有利于包埋率的提高;心材与壁材的比例对包埋率有一定影响,但是,心材比例过高,将会导致包埋乳化液粘度增加,其乳化液稳定性降低,包埋效率因而下降,总固形物含量会影响喷雾干燥速度和壁材玻璃体的形成,从而影响包埋效率。 不同工艺条件对微胶囊的结构有很大影响,因而影响到产品的质量。 关键词:WPC80粉;β-环糊精; 包埋; 壁材; 工艺; Abstract: Inclusion of this study used complex wpc80 powder method for embedding hydrolysate, the impact of embedding wpc80 powder hydrolysate a variety of factors such as wall material selection, composite wall material ratio, heart wood and wall material proportion of total solids concentration, such as the time a heterogeneous system, the embedded product formulations, process parameters were optimized. The experimental results show that, in a wpc80 hydrolysate powder embedded in the process of selection of soybean lecithin, β-cyclodextrin as a wall material than used β-cyclodextrin, monoglyceride and other materials to build a better wall effect; wall material ratio (β-cyclodextrin / soybean lecithin) on the rate of embedded products significantly. Microcapsules in the appropriate scope of emulsion viscosity, increase the ratio of β-cyclodextrin, to increase the rate of embedding; heart wood and the ratio of wall material has a certain impact embedding rate, but high proportion of heart wood, embedding will lead to increased emulsion viscosity, emulsion stability reduced, embedding efficiency dropped, the total solids content will affect the spray-drying speed and the formation of vitreous wall material, thus affecting the efficiency of embedded. Different process conditions on the structure of microcapsules have enormous impact, affecting the quality of the products.
